My husband has mastered making homemade guacamole and we can eat it by the spoonful.

One great way to stay away from the fat in dressings and sugar in sauces is to substitute using avocado.
It is a healthy fat that is packed with nutrients and fiber.
Dr. Oz claims it's one of the best fat burning foods.
I like it best mashed with a touch of salt, pepper and a little lime.
I use it on sandwiches, salads, everything.
I have avocado almost every day.

DeleteI actually never cared for avocados until I got pregnant. I realize that I've come to like them and strawberries and have eaten more of both in the last few months than I probably have in my whole life. I never thought about using it in dressings, thanks for the tip.

ReplyDeleteAvocado with Warm Bacon Cilantro Dressing
makes 4 servings
1/3 pound sliced bacon (about 4 slices)
2 firm-ripe avocados, each pitted, peeled, and cut into 4 to 6 wedges
3 garlic cloves, minced
1/4 cup water
2 tablespoons fresh lime juice
1 1/2 teaspoons sugar
Kosher salt
Freshly ground black pepper
2 tablespoons chopped cilantro
Cook bacon in a skillet over medium-low heat until crisp.
Drain bacon on paper towels. Remove pan from heat and pour the bacon fat into a bowl. Add 2 tbsp. bacon fat back into your skillet.
Divide the sliced avocado wedges among 4 plates.
Heat bacon fat over medium heat. Add garlic, 1/4 cup water, lime juice, and sugar and simmer for 1 minute, stirring.
Season with salt and pepper. Stir in cilantro.
Crumble the bacon in to the skillet.
Stir until combined.
Spoon over avocado wedges and serve immediately.
I LOVE avocados! I hardly ever get tired of them. They are so good and so good for you! We always buy the big bundle from Costco and they are the BEST!
ReplyDeleteI LOVE your blog!! I am obsessed with avocados too. I have at least one a day. I usually slice it up on a greek yogurt egg salad sandwich, use it in place of mayonnaise, make hummus with it, and chopped it up with almost anything I eat. So good for you!!
